a party in a glass… or a cupcake

The girly-fruity drink: it always comes out in a super fancy glass, brimming in a rainbow of hues, and adorned with teeny umbrellas, lemon peels curled into ringlets and limes carved into shamrocks. And, the names… ‘Sex with an Alligator’ and the ‘Incredible Hulk,’ they are like a party in a glass.

My friend, Christie, adores these mixed creations. So, to celebrate this girl: who makes sure I put my best foot (and face) forward… she polishes my hobbit feet into ‘twinkling toes’ and waxes my brows into pretty arches; who will always sympathize with your woes, no matter how trivial they may be; who plays with her nephew with true joy for hours at a time; who embraces the random act of kindness by buying the drinks for the car behind her in the Second Cup drive-thru; and who raises a pretty parasol clad drink with in her perfectly manicured hand with flair…. I baked Cosmopolitan Cupcakes.

Cosmopolitan Cupcakes
5 Tbsp butter, room temperature
1 cup minus 1 Tbsp sugar
1 egg
1/2 tsp vanilla
pinch of salt
1 1/4 tsp baking powder
1/4 tsp baking soda
1 1/2 cup flour
1/8 cup buttermilk, room temperature
the ‘virgin cosmo’ – 1 tsp lime zest, 1/2 tsp orange zest, 3 Tbsp cranberry juice, 3 Tbsp orange juice, 3 Tbsp lime juice
red food coloring (optional)

Preheat the oven to 350F. Line a mini-muffin pan with small cupcake liners (this recipe made 34 for me).
Cream the butter and the sugar together until fluffy. Continue mixing and add the egg, once combined add the vanilla.
In a separate bowl mix the flour, salt, baking soda and powder.
Mix the “cosmo.”
While mixing on low add a third of the flour mixture, then a half the cosmo, a third of the flour, the other half of the cosmo, add the remaining flour and then add the buttermilk. Continue mixing until combined. Add food coloring to color as you wish.
Fill each mini-muffin liner 2/3 full and cook for 15-17 minutes, until a toothpick comes out clean. Cook for 5 minutes in the pan and then cool on a wire rack.

Frosting
5 Tbsp butter, room temperature
2 cups confectioners sugar
mix the ‘cosmo’ – 1 Tbsp vodka, 2 tsp lime juice, 2 tsp orange juice, 2 tsp cranberry juice
red coloring – optional

Cream the butter and sugar together until fluffy. Add the cosmo and cream until smooth and then, if desired, add the coloring. If a bit runny place in the fridge for 15 minutes before placing in a piping bag and topping cupcakes.

Garnish with tiny slices of lime.

I have to admit that we all enjoyed these tasty sweets and my husband even said they may be his very fav or your baking creations.
